چکیده

Acetylation is a chemical modification for estherification, in which hydroxyl groups are replaced with acetyl groups that offers him major stability, changing the physicochemical and functional properties of the starches. Acetylated starches presents 6-10 ° C less at the gelatinization temperature and the maximum peak viscosity is greater than that of a native starch, so are more readily dispersed. The acetylation also increases the clarity and stability of the gels and reduces the retrogradation. Isolate the barley starch and modify his propierties by means of chemical agents: anhydride acetic (AA) and vinyl acetate (VA) and characterize them, have been the aim of this work. With regard to the content of present starch in the grain (60%) the obtained yield was 50 %. The percentage of acetyls reached was between 3 and 6%; with the use of the AA, was 1.6 times times higher than VA and were obtained major incorporation of acetyl groups; the degree of substitution was of 0.143 and 0.240, acording VA or AA was used, respectively. A difference was observed in the average diameter of particle, for the native starch (NS) was of 19μm, while for the starches treated with VA and AA was 22μm and 104μm respectively, due to the introduction of acetyl groups. The morphology of the granules is not affected by the acetylation process. FTIR analysis confirmed the degree of acetylation of starch.

Response of barley quality traits, yield and antioxidant enzymes to water-stress and chemical inducers

Two field experiments were carried out in order to investigate the effect of chemicalinducers [benzothiadiazole 0.9 mM l-1, oxalic acid 1.0 mM l-1, salicylic acid 0.2 mM l-1] onphysiological and technological traits as well as on yields and antioxidant enzyme activities ofbarley grown under abiotic stress (i.e. water surplus and deficit conditions). Results showed thatrelative water content, le...

The Effect of Modified Starch Based Fat Replacer on Milk Properties

In this study, modified starch was used as a fat replacer in the milk. The fat replacer was manufactured from modified starch such as pre-gelatinized and cross–linked starches. Modified starches were manufactured by hydrochloric acid and citric acid treatments from potato and wheat and were added to skim milk at concentrations of 0.15%, 0.30% and 0.45%. Viscosity, total solid, fat content, titr...

Starch Branching Enzymes and their Genes in Sorghum

Mutisya, J.M. 2004. Starch branching enzymes and their genes in sorghum. Doctor’s dissertation. ISSN 1401-6249, ISBN 91-576-6768-3 Starch is an important raw material both for food and non-food purposes. It is synthesized and stored in source and sink tissues in plants. The starch deposited in amyloplasts of storage tissues possesses several physico-chemical properties, which makes it desirable...

Application of Mathematical Models to Estimate Metabolizable Energy Contents of Energetic Concentrate Feedstuffs for Poultry

A study using 51 wheat, 56 barley and 34 oat grain samples was conducted to investigate the feasibility of predicting the apparent metabolizable energy (AME) value of these cereals for poultry. Stepwise regression analyses were performed to evaluate the relationship of AME with starch, ether extract (EE), crude fiber (CF), soluble sugar (SS), ash and crude protein (CP) (for wheat and barley gra...

The deposition and characterization of starch in Brachypodium distachyon

Brachypodium distachyon is a non-domesticated cereal. Nonetheless, Brachypodium was recently introduced as a model plant for temperate cereals. This study compares grain starch metabolism in Brachypodium and barley (Hordeum vulgare). In Brachypodium, we identified and annotated 28 genes involved in starch metabolism and identified important motifs including transit peptides and putative carbohy...
